Prep time: 10 minutes, Cook time: 15 minutes, Serves: 5-6
INGREDIENTS:
- 6 Large eggs
- 3 Quarters of a cup of granulated sugar
- 1 Cup heavy cream
- 2 Cups whole milk
- 1/2 Tsp ground nutmeg
- 1/2 Tsp vanilla extract
- Pinch of cinnamon for topping
- 1/2 Cup bourbon (optional)
- 1/2 Cup rum (optional)
METHOD:
- Separate the eggs and place the egg yolks in a medium sized mixing bowl and add the sugar and whisk until light and creamy.
- In a medium sized saucepan on medium to high heat add the milk, cream and nutmeg and slowly heat until the mixture is steamy hot but not boiling.
- Slowly add the egg mixture into the milk mixture constantly whisking, cook the eggnog stirring with a wooden spoon until the mixture begins to thicken and coats the back of the spoon.
- Remove the mixture from the heat and stir in your vanilla extract.
- Strain the mixture through a strainer to remove any curdled bits, let the mixture cool for around one hour in a jug.
- Once its cooled stir in your alcohol if you have chosen this option.
- Sprinkle your cinnamon on top and enjoy!
