Prep time: 25 minutes, Cook time: 1 hour 45 minutes, Serves: 6 People/12 slices
Ingredients:
- 400g Mixed dried fruit
- 125g Butter at room temperature
- 4 Medium eggs
- 4 Tbsp milk (60g)
- 125g Soft brown sugar
- 250g Self raising flour
- 1 Tbsp mixed spice
- 1 Tbsp grated orange zest
- 1 Tbsp grated lemon zest
- 1 Tbsp jam any flour (optional)
- 100g Chocolate chips any kind (optional)

Method:
- Preheat the oven to 170C.
- Grease your cake tin with some butter.
- In a large mixing bowl add your butter, eggs, milk, sugar, flour, jam, spice, both zests and chocolate chips.
- Beat the mixture well until its all combined.
- Add your dried fruit into your mixture and mix by hand until the fruit is incorporated.
- Place the mixture into your greased cake tin.
- Place in the oven on the middle shelf for 1 hour and 25 minutes, test the cake mixture with a toothpick if it comes out dry its done, if it comes out wet place the cake back in the oven for a further 10-15 minutes until its cooked.
- Once the cake is cooked leave it out the oven for ten minutes then remove it from the cake tin to a wiring rack to cool.
