How To Make Delicious Derby Biscuits

Makes a tray of about 12 biscuits


  • 1lb Flour
  • 8oz Margarine
  • 4oz Caster sugar
  • 1oz Raisins or currents (optional)
  • 1 Tsp baking powder
  • 1 Small drop of yellow food colouring
  • 1 Tsp lemon juice
  • 1 Tbsp of cold water


  1. In a large mixing bowl add with a whisk cream your sugar and margarine together.
  2. Add to the bowl the food colouring and water and stir.
  3. Whisk in all your dry ingredients until combined until it looks like dough and a little more water if necessary.
  4. Sprinkle flour on your work surface and roll out your dough into a 2mm thickness.
  5. Once your dough is rolled out cut out your biscuits with a biscuit cutter.
  6. Place your biscuits on a lined grease baking tray.
  7. Bake your biscuits in the oven for 30 minutes at 170C.
  8. Once cooked remove and enjoy.
