Prep Time: 13 minutes, Cook Time: 10 minutes, Serves:3-4 people
INGREDIENTS:
- 2-3 Large Chicken breasts finely sliced
- 1 Onion finely sliced
- 1/2 Red pepper sliced
- 1/2 Green pepper sliced
- 1/2 Yellow pepper sliced
- 6-8 Tortillas
- Optional salad
- Optional mayonnaise
- Optional chilli sauce
For The Marinade:
- 1 Tbsp chilli powder
- 1 Tbsp paprika
- 1 Tbsp ground coriander
- 1/2 Tsp cumin powder
- 1 Garlic clove crushed
- 2 Tbsp olive oil or sunflower oil
- 1/2 Lemon juiced
- 1 Tsp lime juice
- Pinch of salt
- Pinch of black pepper
- 1/2 Tsp oregano

METHOD:
- Mix all your marinade ingredients into a large bowl until it makes a paste.
- Place your finely chopped chicken breasts, peppers and onion into the paste and mix all together until well combined and everything is coated evenly. Let it marinade for half hour or one hour if you have the time.
- Preheat your oven to 200C.
- Heat your griddle pan or wok until its pretty hot and add the chicken marinade to it. Keep moving your chicken and veg around for 5-7 minutes. Make sure the chicken is cooked by cutting the thickest part to make sure. If its not cooked keep it on the pan until it is.
- Place your tortillas into the oven to heat up for 1-2 minutes.
- Serve up your chicken and tortillas with your salad, mayonnaise and chilli sauce and enjoy.
