How To Make Delicious Carrot Cake



  • 250g (2 cups) All purpose flour
  • 2 Tsp baking soda
  • 1/2 Tsp salt
  • 1 Tbsp ground cinnamon
  • 1 1/4 Cup vegetable oil (295ml)
  • 1 Cup granulated sugar (200g)
  • 1 Cup brown sugar (200g)
  • 1 Tsp vanilla extract
  • 3 Large eggs
  • 3 Cups grated & peeled carrots (300g)
  • 1/2 Cup raisins (optional)
  • 225g Cream cheese room temp (8 ounces)
  • 1 1/2 Cup powdered sugar (140g)
  • 1/3 Cup heavy whipping cream (80ml)


  1. In a medium sized mixing bowl whisk together your flour, baking soda, salt and cinnamon until well combined.
  2. In a separate small bowl whisk together your oil, both sugars, vanilla and eggs until well combined.
  3. Now you can add your dry ingredients in your medium sized bowl into the egg mixture and stir until your dry ingredients disappear.
  4. Place your grated carrots and raisins into the cake batter and stir until well combined.
  5. Heat the oven to 350 degrees fahrenheit (175c).
  6. Grease two 9 inch round cake pans and line the bottom with parchment paper.
  7. Divide the cake batter between your 9 inch pans and stick them into the oven for 30-40 minutes.
  8. Insert a toothpick into the centre of the cakes when they come out to make sure its cooked all the way through.
  9. Cool the cakes in the pan for ten minutes.
  10. Now place them on cooling racks until completely cool.
  11. In a large mixing bowl beat your cream cheese with a handheld mixer for 1 minute until it looks creamy.
  12. Slowly beat in your powdered sugar until fluffy.
  13. Pour your heavy cream in until well combined (cover until your ready to frost your cake).
  14. Once your cakes are completely cool, frost the top of one cake layer, place the other cake layer on top. Use your leftover frosting to layer your cake and leaving the sides unfrosted.
  15. Now you can enjoy your own delicious carrot cake.
