Prep time: 15 minutes, Cook time: 20 minutes, Serves: 4-5
INGREDIENTS:
For the marinade:
- 2 Tbsp lime/lemon juice
- 2 Tbsp oil of your choice
- 1 Garlic clove minced
- 1/2 Tsp salt
- 1/2 Tsp chilli powder
- 1 Jalapeno sliced
- 1/4 Cup sliced cilantro
- 1/2 Tsp ground cumin
- 1/4 Tsp pepper
For the chicken:
- 2 Boneless skinless chicken breasts
- 1 Large onion sliced
- 3 Bell peppers sliced
- 2 Tbsp oil of your choice
- 1/2 Lime/lemon
For serving:
- 10-12 Tortillas
- Salsa
- Lettuce sliced
- Sliced avocado (optional)
- Sour cream
- Shredded cheese of your choice (optional)
METHOD:

- Mix all your marinade ingredients in a large mixing bowl and add the chicken and mix it until well combined and let it sit in the fridge for around 30 minutes to up to 8 hours.
- Get your marinade chicken from the fridge and wipe off any excess marinade.
- Get your cast iron griddle or frying pan and add your oil on high heat for around a minute, Add your sliced chicken breasts and let them cook. Once cooked remove them from the frying pan.
- Add another bit of oil to the same frying pan and add your onions, bell peppers and lime and let them cook until they have softened.
- Warm up your tortillas and you can now add your chicken, onion, peppers and all the toppings you like and now you can enjoy your own fajitas.
